Happy St. Patrick's Day, to all of my Irish and non-Irish and in between f'listies :)

So I've never tried to cook corned beef by myself (i.e. since I moved out of my parents' house) and I wanted to because [livejournal.com profile] caitirin hasn't ever tried one. She isn't a big fan of pot roast or anything, so we never got any corned beef to try. But today, I was determined to have some! Also, Caitirin said she was going to make me corned beef come hell or high water n_n

So Caitirin found a recipe for sliced-up corned beef that cooked a lot faster than regular corned beef, and I went to the grocery store to buy supplies. First problem - no sliced up corned beef. Oh well, I thought, we have knives. We can slice it up ourselves! Second problem - no green cabbage. Hey, I thought - no problem! I like red cabbage better anyway. A quick call to Caitirin confirmed that she doesn't like cabbage anyway, so I bought the red cabbage.

AHAHAHAHA, my entire dinner is PURPLE XD

Anyway, at home, we cut the corned beef up and simmer/boiled it in a pot with beef broth, potatoes, the cabbage (purple! *giggles*), and onions and garlic.

After about an hour or an hour and 15 minutes, which was 55 minutes longer than the recipe said, the corned beef was tender (well, tender enough. Not falling apart.) The potato and cabbage had been done somewhat sooner :) But it was all purple!

It was delicious :) I'm simmering the meat some more so it's more tender and I can take it for lunch tomorrow.

Apparently I'm Irish on my father's side. I didn't remember this!
